The headline of the 3.0 is heating speed. Serious Eats timed it at 33 minutes to bring cold water to 190 degrees Fahrenheit, against 60 minutes for the 2.0 it replaces, and about 23.5 minutes to reach 150 degrees in a two-gallon container, five minutes quicker than the old model. The 1100 watt element is why. TechGearLab gave it 4.8 out of 5 and its Editor's Choice, the highest score on its record.
An average discrepancy of 0.06 degrees
Accuracy is quoted at an average discrepancy of 0.06 degrees, and holding a bath within a fraction of a degree is the entire proposition of sous vide, because it is what separates an egg cooked properly from one that is not. Serious Eats held it at 190 degrees for an hour and found the reading steady, and it recovers quickly when cold food goes in, which matters more in practice than the headline accuracy figure does.
A dual-line display and dual-band Wi-Fi
The dual-line display shows time and temperature at once, which sounds trivial until you have used a circulator that makes you toggle between them with wet hands. The controls are physical and clearly labelled. Dual-band Wi-Fi holds a steadier connection to the router than the older single-band models managed, and the app carries a large recipe library that is genuinely useful to anyone new to the technique. None of it is required, since the cooker works completely from the panel.
The timer starts before the food goes in
The design flaw everyone lands on is the timer. It starts counting as soon as the water reaches temperature rather than when the food goes in, so unless the bag is dropped at exactly the right moment the timer has to be reset by hand. Serious Eats called that essentially useless, and it is hard to argue with, because an automatic timer that needs manual intervention every cook is not automatic. Circulation is also strong enough to jostle delicate items, and several eggs at once can end up knocking together.

At $169.99 it undercuts Anova's own Pro while matching most of what that model does, and it is lighter and easier to clamp onto different containers than the unit it replaces. The two-year warranty is longer than most in the category. Buy the Pro for long cooks in large vessels; buy this one for everything else. The timer behaviour is the only thing on the list that will annoy you regularly.
