A lateral burner instead of a rear one

The Arc XL's flame comes up the left-hand wall and rolls across the roof rather than firing from the back the way most gas ovens do. Two things follow. The floor of the oven is unobstructed, so a 16-inch pizza has room to be turned, and the heat arrives from above and across rather than from one hot end, which is why the far edge does not scorch while the base is still pale. Pala Pizza rated it 4.9 out of 5 and called the burner the best it has used.

38 minutes to over 900 degrees, then a fast recovery

Preheating takes patience, at roughly 38 minutes for the centre of the stone to come up, with the left side ready sooner and the middle last. Once it is there the oven holds. Recovery after launching a pizza is under two minutes, so a queue of pizzas at a party does not stall. The built-in gauge reads the stone rather than the air and under-reads badly during the first half hour, which makes an infrared thermometer worth having for the first hour of any session.

Neapolitan in 90 seconds, New York at a quarter flame

Above 900 degrees a Neapolitan base is done in ninety seconds or less, puffed and leopard-spotted underneath. The more interesting trick is the other direction: turned down to a quarter and launched around 700 degrees, it browns a New York-style pizza through without charring the toppings, which most high-heat gas ovens simply cannot do. Homes and Gardens also cooked calzones, vegetables, chicken and brownies in it successfully, though calzones need a turner peel held over the top to stop the crust catching.

58.5 pounds, and propane only

It weighs 58.5 pounds and arrives at 73 pounds in the box, so getting it onto a bench or a stand is a two-person job and moving it is not something anyone does casually. It runs on propane and only propane, with no natural gas conversion and no wood, so the smoke flavour some buyers are after is off the table. The matching stand is a separate $249.99, which pushes the real cost well past the sticker price.

$999.99, and about five minutes to set up

Setup is genuinely quick: attach the propane hose, fit batteries for the ignition and thermometer, slide in the vent cover and burner guard, and pull out the shipping bumpers under the stone. Five minutes, and no tools of consequence. At $999.99 the Arc XL sits between the small Roccbox and the Dome, and what the money buys is the burner geometry and a build that feels like the more expensive oven. Homes and Gardens scored it 4.75 out of 5.
